Job Description

1. Responsible for the overall production of all dim sum, buns, noodle, cold-deli items, sushi, sashimi, rice bowls and other Japanese dishes in the department.

2. Manage, schedule, and produce dim-sum, buns, noodles, and cold-deli items timely to meet customer demands; Responsible for the timely preparation of raw material and ensuring the sanitary standard; Prepare and package the food items based on customer requests from all channels.

3. Monitor inventory level of all materials and ingredients used in the production of all food in the hot deli department. Inform the Department Manager of quantities to be ordered on a continuous basis.

4. Ensure the quality of food products and required production procedures are strictly followed. Responsible for the proper storage of all food particularly sushi, sashimi and other raw materials in the walk-in freezer/cooler, as well as in the dry storage area.

5. Prepare all cooking ingredients needed and follow the food safety handling process; Monitor all food preparations and processing flows in compliance with approved recipes and regulatory procedures, including the HACCP plan for sushi and sashimi productions.

6. Maintain the cleanness of countertops, tables, and cutting knives used in the production process;

7. Responsible for making sure all equipment used in the production of all the above foods are in good working order and that breakdowns are reported as soon as possible to the department manager for repairs by appropriate vendors; Follow safety procedures when using knives.

8. Responsible for monitoring temperatures of all the above food during preparation and display to comply with government health food safety codes.

9. Perform other duties as for business needs.

Job Type: Full-time

Pay: $17.50 - $18.00 per hour
